Spirits: When producing spirits, the produce - fruits or herbs - is steeped in high-proof neutral alcohol to let the desired flavors fully dissolve. This flavored alcohol is then distilled. This procedure is used to extract the flavor of produce low in fructose like fresh herbs, or in cases where the volume of the produce is too small for mashing and direct distillation, as is the case with raspberries.
